Sounds like the Thermostat even though the thermostat works while running it still has a job to do when it gets how when shut off... It is not to close which seems like to me. Either the thermostat is not functioning correctly or the engine temperature sensor is not working properly allowing the Thermo to shut when the coolant is still hot. Try this and see if it changes. Or you may go ask a dealer of the problem.
